Strawberries are highly perishable. To maintain quality and freshness, remember these suggestions:
Refrigerate your berries uncovered in their original container as soon as you get home.
Don’t wash or cap your berries before you refrigerate them. Doing so decreases their food value and increases spoilage.
Wash your berries before you cap them, but don’t let them soak. Doing so will make them lose flavor and color.
Freeze ‘Em With Sugar!
Only Way: To freeze four cups of sliced berries, use 3/4 cup sugar, letting stand a few minutes to let sugar dissolve. Bag and freeze immediately.
Sugar does seem to improve the quality of frozen berries, especially over longer storage periods.
Freeze ‘Em Without Sugar!
Way One: Leave berries whole and freeze in a single layer on a cookie sheet, then bag.
Way Two: Slice or leave whole, bag and freeze.
